Whole Wheat Blueberry Banana Bread

This is a hearty, moist breakfast (or dessert) bread that incorporates both blueberries and bananas. Plus, it’s whole wheat and generally healthy.

Ingredients:

2 cups Whole wheat flour
¾ tsp Baking Soda
½ tsp Salt
1 tsp Cinnamon
½ tsp Nutmeg
½ cup White sugar
½ cup Brown sugar
¼ cup Butter, softened
2 Eggs
1 ½ cups Mashed banana (about 3)
1/3 cup Low fat, plan yogurt
1 tsp Vanilla
½ cup Blueberries, plus a few for garnish

Directions

1. Preheat oven to 350°F.

2. Mash the bananas with a potato masher (or a fork).

 

 

 

 

3. Mix flour, baking soda, salt, cinnamon and nutmeg together.

 

 

 

 

4. Cream together sugars and butter.

 

 

 

 

5. Add eggs, one at a time, to the sugar mixture.

 

 

 

 

6. Add the yogurt to the mashed banana.

 

 

 

 

7. Add the sugar mixture to the banana mixture, then stir in the vanilla.

 

 

 

 

8. Add banana mixture to dry ingredients and mix until combined.

 

 

 

 

9. Stir in blueberries.

 

 

 

 

10. Coat a 8 1/2 inch by 4 1/2 inch loaf pan with cooking spray.

11. Pour batter into prepared pan.

12. Top the batter with a few blueberries.

13. Cook in the preheated oven for 1 hour 5 minutes to 1 hour 15 minutes or until a wooden pick inserted into the center comes out clean.
