Spicy Chorizo Mussel Bowl

If there is one recommendation I have for this recipe: don’t skip out on the chorizo! It adds so much to the dish! I almost just bought spicy sausauge, since it was a bit less expensive, but I am so glad I stuck with the chorizo.

Ingredients

6 ounces Whole wheat pasta (spaghetti or linguine is best)
1 Onion, chopped
1 Green bell pepper, chopped
8 oz Chorizo sausage, removed from the casings
3 Cloves of garlic, sliced
2 Tomatoes, chopped
½ cup White wine
¼ tsp Black pepper
16 oz Low sodium beef broth
1 ½ lbs Mussels
¼ cup Parsley, chopped

 

Directions

  1. Prepare the mussels by checking to be sure they are all still alive. You can do this by tapping them lightly and throwing out the mussels that stay opened, even after they are tapped. Then, clean them thoroughly under warm water, removing any barnacles or beards. After the mussels are cleaned, place them in a bowl of
  2.  warm water while you prepare the rest of the meal.
  3. Cook the whole wheat pasta according to the package directions.
  4. Heat oil in a skillet over medium-high heat. Add the onion, garlic, and green pepper. Saute for 2-3 minutes or until onions are soft.
  5. Add the chorizo to the skillet. Cook 5-6 minutes or until the chorizo is browned.
  6. Add the tomatoes to the skillet. Cook 2 minutes or until tomatoes are heated.
  7. Add the white wine, black pepper and beef broth and bring to a boil.
  8. Add mussels. Cover the skillet and cook for 5 minutes or until the mussels have opened.
  9. Remove any unopened mussels.
  10. Remove the skillet from the heat, dish up the mussel mixture over a nice pile of whole wheat pasta and sprinkle parsley on top.
